Buttermilk oatmeal pancakes

I have been wanting to try this recipe for months now.  I either didn't have buttermilk, or oats, or time!  I decided on Sunday morning that I was making these pancakes no matter what.  I didn't have buttermilk, the right kind of oats or the correct amount of time!  They still turned out fantastic!

I needed to make my own buttermilk, which as it tuns out, is super simple!  I mixed 2 tablespoons (plus a smidge) of white vinegar into my 2 1/4 (a little less) cups of whole milk.  I let it sit for 5 minutes or so (looking back I should have let it sit for 10 minutes), stirred and started my recipe!  I always have a gigantic BJ's sized bottle of white vinegar for my washing machine. 

The recipe should be started the night before, but my brain is a little slow.  I didn't have old fashioned oats though, only quick cooking (1 minute) oats, so I figured it should be fine.  I did specifically buy whole wheat flour a few weeks ago with this recipe in mind.   I just stuck the oats and the buttermilk in a bowl and let it sit for a few minutes while I gathered the rest of the ingredients. 

I would say that the recipe is easy, but cooking them was a little difficult.  The batter is super thin so it would spread quickly.  I just used a small ladle to control how big they got.  The were thin like crepes. 

We did eat them all, and they were dang tasty.  Hubby said they were more eggy then he anticipated, but still good.  I plan on making them again, but I will soak the real oats overnight and see if that makes the batter thicker. 

I started this post weeks ago and erased the pictures on my phone!  Next time....pictures, I promise!!

Hasselback potatoes

There are many a hasselback potato pins going around.  I was mildly interested in trying them until I saw this: Tasty Kitchen Blog Scalloped Hasselback Potatoes

The last time I tried making something with russet potatoes I failed miserably, so I stuck with my tried and true tiny little yukon gold creamer potatoes.  I did not think through all the way the fact that I needed to cut them and stuff them. 

It turned out OK, but I lost a lot of the yummy cheese and butter all over the pan. 
In the end they were tasty, but not worth all the hassle (get it!).  I'll stick with regular scalloped, and my mashed!

Crispy Cheddar Chicken

I like to pin food.  It makes me happy.  My food boards outnumber my other boards 2 to 1.  Some of the recipes I have tried go onto a tried and true board along with my comments.  Other recipes get deleted completely.  I'm not one to put negative comments on a recipe and leave it up.  Someone else may enjoy it, or I may have screwed it up.    Last night I decided to try one that has been floating around Pinterest for a while.  It's called Crispy Cheddar Chicken, and the original recipe is here:

I love it when bloggers (and chefs!) post pictures as they go along. It makes it easier to follow, and it allows you to know if you are doing it correctly. 
This recipe was super easy, and I had (almost!) everything I needed.  I had to make a quick run to the food dog to pick up a can of cream of chicken soup.  No big deal. 

I started by shredding my cheese.  I used extra sharp white cheddar (an 8 oz block), and 1 sleeve of Ritz and 1 sleeve of Townhouse crackers.  Everything else was spot on.  My chicken dd not look anything like the original recipe though.  But, it was tasty.

All in all the dish was delicious, the sauce was tasty and we will make it again!  I think next time I will freeze the block of cheese for a few minutes before using and shred it right before using.  It kind of clumped and didn't stick very well.  DH gave it a thumbs up, and baby girl gave an enthusiastic Yummmm!!

Fabric Baby Gate

4th of July was a day of relaxation and staying out of the dang hot weather! I decided to tackle something that has been on my to do list for about 6 months now! 
I saw this wonderful fabric baby gate on Pinterest that I just loved.  The one downfall of all these fantastic DIY masterpieces is the fact that I don't have a sewing machine!  And, I suck at sewing by hand.  Like, really, really, really suck!  I bought 2 yards of a "discount" fabric at the local fabric store (I always try to shop local when I can), and decided that hot glue should work just as well as sewing it.
I cut a piece of ribbon into 4 long strips and measured my door.  It worked out well!  I did just use 1 section of fabric, not the fabric + batting and all that jazz.  It droops a little in the middle, but fr a funky shaped and sized doorway it works great!
I will take pictures tonight and post tomorrow.
This weekends project: homemade ice cream!

Towels

I never thought there was anything wrong with how I washed our towels, until I pinned something.  Then I realized just how wrong I was using laundry detergent and fabric softener!  Clearly the correct thing to use was vinegar and baking soda.  Both is which I have stocked up on thanks to a recent BJs shopping trip!

So, I tried it with  load of towels this weekend.
Wash your towels in hot water with a cup of vinegar, then run again in hot water with a half-cup of baking soda. That will strip your towels from all of that residue & mildew smell & will actually leave them feeling fluffy & smelling fresh. This really works!- Trying this TODAY!

I started with 1 cup of vinegar on a hot wash, followed by 1/2 cup of baking soda on a hot wash.  They really didn't smell as fresh as I had hoped after I dried them, and I didn't notice a huge difference in them when I used one after my shower.  But I am a fan of stripping towels every once in a while just to keep them from looking dingy or smelly!

I will try this every weekend with a new load of towels until they are all done (I swear we have 8000 towels).  Maybe because it is giving my front load washer a little cleaner at the same time!
